Portland's third-wave story begins at 4525 SE Division Street, where Duane Sorenson opened Stumptown Coffee Roasters in 1999 inside a former hair salon — whose name, The Hair Bender, became the company's signature espresso blend. Stumptown's insistence on paying farmers well above fair-trade price, verified by in-person farm visits, helped establish the direct-trade practices now standard worldwide. SE Division and the Central Eastside corridor remain the spiritual center of Portland's roasting culture.
The roasters that followed cemented the reputation. Coava Coffee Roasters (2008) operates from a dramatic industrial flagship on SE Grand Avenue. Heart Coffee Roasters (2009), founded by former professional snowboarder Wille Yli-Luoma, brought Scandinavian light-roast philosophy to E Burnside. Good Coffee, started in 2014 as a sidewalk cart on Division Street, has since grown to seven metro locations with its own roasting facility.
Northeast Portland's Alberta Arts District adds an international layer: Proud Mary Coffee, founded in Melbourne in 2009, chose NE Alberta Street for its first US location in 2017, bringing printed origin cards with every drink. The 1.5-mile Alberta corridor — Case Study, Extracto, Roseline, Autumn — has no Starbucks by cultural default, and closes to traffic for Last Thursday art walks where coffee shops anchor the neighborhood.
A bit of history
Stumptown was founded in 1999 by Duane Sorenson at 4525 SE Division Street in a former hair salon called The Hair Bender — a name he borrowed for what became one of the most recognized espresso blends in American specialty coffee.

Stumptown Coffee Roasters is a specialty coffee roaster founded in 1999 by Duane Sorenson in Portland, Oregon. The company built its reputation on direct relationships with coffee farmers and traceable single-origin sourcing, becoming a defining reference point for third-wave coffee in the United States. Its Hair Bender blend and early bottled cold brew program are among its most recognized contributions to the industry.
Our takeStumptown earned local recognition before much of the current industry infrastructure existed. Willamette Week, Portland's alternative weekly, named it the winner in the Best Coffee (Locally Roasted) category of its annual 'Best of Portland' readers' poll in 2006 — an early marker of community standing that preceded the wave of national coverage the roaster would later receive in food and coffee media. The Portland Downtown café operates as a full-service espresso bar with rotating single-origins on filter alongside the standard espresso menu, plus retail bags and merchandise available in-store. The space trades on function over atmosphere: clean counters, capable staff, minimal distraction from the cup. For visitors outside Portland, Stumptown runs a direct-to-consumer online shop with whole-bean subscriptions and nationwide shipping.

Coava Coffee Roasters is a Portland, Oregon single-origin specialist that opened in 2010, with its flagship café and roastery at 1300 SE Grand Ave. Built around traceable, single-farm sourcing and long-term producer partnerships, Coava ships roast-to-order nationally and positions itself in the competition-adjacent tier of specialty roasting.
Our takeBarista Magazine has featured Coava in a piece titled 'Catching Up with Coava Coffee Roasters,' revisiting the roaster's dual café-and-roastery presence in Portland. The framing—a check-in rather than an introduction—reflects Coava's standing as a durable institution in the Pacific Northwest specialty market rather than a newer entrant still establishing credibility. The SE Grand Ave flagship is worth the visit for the space alone: high ceilings, exposed beams, and a long concrete bar as described by the café itself. Open daily at 7 a.m., it functions as the intended full expression of the Coava experience. The Hawthorne espresso bar runs earlier (weekdays from 6 a.m.) and leans domestic—a fireplace, communal seating, and a couch designed for Portland's rain. Both menus rotate seasonally across single-origin offerings; house-made syrups anchor the honey and vanilla lattes, while mochas use Seahorse Chocolate. Pastry programs source from Bakeshop for conventional options and Petunia's Pies & Pastries for gluten-free and vegan alternatives. For those outside Portland, Coava ships roast-to-order through its online shop at shop.coavacoffee.com.

Best time to visit
Neighborhood loyalty runs deep — locals have a 'home shop' and will wait in line for it rather than settle for a closer option. Visit flagship roasters like Coava or Heart on a weekday morning, when roasting staff is on-site and willing to talk through the offerings.
What to order
Portland regulars ask the barista about the single-origin espresso before ordering — higher-end shops like Proud Mary formalize it with printed origin cards. Whether you want a honey-processed pour-over or a house-made coffee soda, the bar is extraordinarily high.
