The Sydney coffee scene

Sydney's specialty coffee culture is anchored in Surry Hills, the inner-city neighborhood that became the spiritual home of the city's third wave. Single O (formerly Single Origin Roasters) opened there in 2003, founded by Emma and Dion Cohen, and was among the first in Sydney to put single-origin coffees and the growers behind them front and centre at a time when the market was dominated by blends. A short walk away on Albion Street, Reuben Hills opened in 2012 after founder Russell Beard sold his earlier café; its industrial space roasts beans on a mezzanine for the café downstairs and for wholesale across Sydney.

Beyond Surry Hills, Sydney's roasting scene reaches into Alexandria, Newtown and the CBD. Mecca Coffee was founded by Paul Geshos in 2005 as a compact café at 67 King Street in the CBD, inspired by Portland's emerging specialty culture; Geshos and partner Sam Sgambellone later expanded to a large roastery and headquarters in Alexandria, building a reputation for transparency and direct relationships at origin. Campos Coffee began in 2002 in a cramped Newtown café under Will Young, growing into one of the most respected names in Australian coffee.

The breadth of the scene is rounded out by smaller, purist operators and dedicated roaster-cafés. Sample Coffee started in Surry Hills before adding a roastery café in St Peters, while Artificer Coffee, also based in Surry Hills, is known for small-batch roasting and a stripped-back, coffee-focused approach. Together these roasters give Sydney a dense, walkable specialty map concentrated in the inner south and inner west.

The term "flat white" was added to a permanent café menu by Alan Preston at his Moors Espresso Bar in Sydney's Chinatown in 1985; Preston said he abbreviated "white coffee – flat" to "flat white," mirroring long black and short black.
