What Makes a Coffee 'Specialty'

Specialty coffee is defined by quality, not marketing. Under the SCA's grading scale, green coffee must score 80 or higher on a 100-point cupping scale to be called specialty; below 80 it is commercial grade. Most specialty falls in the 82–88 range, and the rarest coffees score in the 90s. That score reflects the whole chain — variety (Gesha, Bourbon, SL28), growing conditions, and processing (washed, natural, honey, or anaerobic) — which is why two beans from the same country can taste worlds apart.

How Green Coffee Reaches US Roasters

Almost no small roaster imports a container themselves. Instead, green coffee importers buy at origin, ship it, clear customs, and warehouse it domestically — then sell it to roasters in bag-sized quantities. How Green Coffee Is Priced

Most specialty contracts are priced off the ICE Arabica 'C' futures market with a simple formula: C-price + origin/quality differential + delivery basis. The C-price is the global benchmark (and it has been volatile — it hit record highs in 2025 before easing in 2026), the differential reflects the coffee's quality and origin, and the basis covers the Incoterm. Relationship and direct-trade coffees often skip the C-market and quote a transparent FOB price paid to the exporter instead. Either way, the C-price sets the floor under most of what you pay — which is why roasters watch it daily.

How to Buy Green Coffee, Step by Step

1. 01Browse an importer’s offering list — filter by origin, process, variety, score, and price, and note whether each lot is spot, afloat, or forward.
2. 02Request free samples (about 300g) of the lots you are considering.
3. 03Roast and cup the samples to confirm the coffee performs on your machine and to your palate.
4. 04Place the order — a single 60–70 kg bag, or a smaller sub-bag box if you roast at home. Full pallets earn the best freight rate.

Certifications & Cup of Excellence

Certifications attest to practices, not cup score. USDA Organic bans synthetic inputs; Fairtrade guarantees a minimum price plus a social premium; Rainforest Alliance focuses on environmental and worker standards; Smithsonian Bird Friendly is the strictest (Organic plus shade). A coffee can be certified and still cup as commercial grade — and many of the best specialty lots carry no certification at all. Cup of Excellence is different: it is a blind quality competition, and its winning lots sell at auction to the highest bidder, with most of the money going to the farmer.

The Market in 2026

Demand is strong: US specialty coffee consumption is at a 14-year high, with specialty now drunk by more adults on a given day than traditional coffee. Supply is tight: global stocks have fallen for several years, and the Arabica C-price spiked to records in 2025 (driven by Brazil weather and low inventories) before easing in 2026 — still historically elevated. For a roaster, the takeaway is simple: green is your single biggest cost, it is volatile, and locking the right contracts at the right time matters more than ever.
