What Makes a Coffee 'Specialty'

Specialty coffee is defined by quality, not marketing. How Green Coffee Is Priced

The C-price is the global benchmark (and it has been volatile — it hit record highs in 2025 before easing in 2026), the differential reflects the coffee's quality and origin, and the basis covers the Incoterm. Relationship and direct-trade coffees often skip the C-market and quote a transparent FOB price paid to the exporter instead. Either way, the C-price sets the floor under most of what you pay — which is why roasters watch it daily.

A coffee can be certified and still cup as commercial grade — and many of the best specialty lots carry no certification at all. Demand is strong: US specialty coffee consumption is at a 14-year high, with specialty now drunk by more adults on a given day than traditional coffee.
