The story
The Chacón family at Las Lajas were among the first in Costa Rica to popularise honey processing — leaving varying amounts of mucilage on the bean during drying — alongside fully natural lots.
Their colour-coded 'yellow', 'red' and 'black' honeys helped define a whole category of Costa Rican coffee.
