Coffee Collective Jægersborggade is a specialty coffee roaster and café in Copenhagen's Nørrebro district, Denmark, founded in February 2008 by Peter Dupont. About
Coffee Collective opened its first shop on Jægersborggade in Copenhagen's Nørrebro district in February 2008, founded by Peter Dupont. The roaster arrived early enough in Scandinavia's specialty wave to help define it — building a reputation on direct-trade sourcing, traceable lots, and filter-forward roasting at a time when that approach was still uncommon in the region.
According to Sprudge, Jægersborggade has remained central to the roaster's identity since that original opening. The street, now one of Copenhagen's more characterful stretches, has grown up alongside the café — but the operation's focus has stayed close to its founding premise: fewer coffees, better sourced, served by people who know what's in the bag.
The current lineup reflects a sourcing philosophy oriented around named micro-lots over commodity blends. Colombian Geshas (Peñas Blancas, La Pomarosa) sit alongside Guatemalan selections like Nuevo Progreso in the SL9 variety and Ethiopian washed lots such as Mulugeta. Tasting notes across the range are written with flavor-forward precision — 'white peach, mango and lemonade' on one Colombian; 'rosehip, jasmine, and lemongrass' on the Peñas Blancas Gesha — signaling light roasting aimed at clarity over body.

Coffee & Beans Review
Sprudge covered the roaster in a piece titled 'The Coffee Collective: Back To The Beginning And Looking Forward,' examining the arc from that Jægersborggade debut to the current operation. The Coffee Vine noted a visit as 'rather good,' with particular appreciation for how close guests get to the bar and the baristas working it. TripAdvisor reviewers have repeatedly called it 'simply the best coffee in Copenhagen,' with the atmosphere described as 'bare' — a word that reads as a compliment in this context, meaning stripped of distraction, the coffee doing the talking.
The Jægersborggade shop is the anchor, but coffeecollective.dk ships worldwide. The subscription program rotates the lineup monthly and includes early access to micro-lots and special roasts, with free global shipping for subscribers. Equipment — AeroPress, Kalita Wave drippers — rounds out the online shop for those building out a home filter setup.
