Devoción

Founded by Colombian-born Steven Sutton in 2006, Devoción is a Brooklyn-based specialty roaster with a single-origin mandate: every coffee in its lineup comes from Colombia. The company's central claim — green beans traveling from Colombian farm to roasted bag in as few as ten days — is unusual enough in the industry to function as both supply chain discipline and marketing thesis.

Sutton built the company around the observation that most specialty coffee reaches consumers months after harvest, by which point even well-grown green beans have shed some of their aromatic complexity. Devoción's response was to build sourcing relationships directly with Colombian farms operating in active harvest windows, rotating through growing regions as crops mature. That Colombia-exclusive constraint has remained in place from the start, making Devoción one of the few roasters in North America to stake its entire offering on a single country of origin.

The house blend lineup covers a wide range of Colombian flavor profiles. Toro leads with cocoa, vanilla, cherry, and almond; Honey layers orange blossom and caramel against a eucalyptus note; Wild Forest reaches for wild berries, Andean blueberry (agraz), and cocoa butter; Citrus runs toward orange blossom, mandarin peel, and lemongrass. The decaf uses the sugarcane ethyl acetate process — a Colombia-specific method that avoids synthetic solvents and is well-matched to the company's origin focus. Seasonal single-origin offerings rotate with harvest cycles across Colombian growing regions.
