Wonderstate Coffee — formerly Kickapoo Coffee Roasters — operates out of Viroqua, Wisconsin, a small city in the Driftless region roughly 90 miles southeast of La Crosse. The roastery has been profiled in academic literature on entrepreneurial sustainability as early as 2018, and in 2025 Roast Magazine named it Roaster of the Year. The name change from Kickapoo to Wonderstate, documented by Drink Trade, reflected a deliberate effort to define what the company stands for rather than simply where it is located.

Kickapoo Coffee Roasters built its early reputation in a region not typically associated with specialty coffee, developing a following on the strength of clean sourcing and consistent quality before the rebrand. A Milwaukee Record first-impression review praised the coffee as "bright" with "fantastic coffee and espresso," and Sprudge highlighted the roastery's "simple and elegant design" for retail packaging — an early signal that the brand was thinking carefully about how it presented itself. The 2018 AABRI proceedings paper on the company suggests it was already being studied as an unusual case of sustainable small-business success in food and beverage.

Wonderstate's current lineup is all-organic and spans recurring blends — Driftless, Heartstrings, Flyway, Star Valley Decaf — alongside rotating single origins from Ethiopia, Honduras, Burundi, and Peru. The roastery runs on solar power and donates 5% of profit. Most distinctively, Forbes noted that Wonderstate has become one of a small number of U.S. roasters to publish a minimum floor price for producers that sits materially above commodity market rates — a sourcing commitment that shapes which farms they work with long-term.
