Mel Coffee Roasters opened in January 2016 in Shinmachi, Nishi-ku, Osaka — a corner location easy to walk past. The operation is anchored by an owner who serves as head judge at the Japan Brewers Cup, the country's most prominent brewing competition, and that competition-level rigor runs through every aspect of the business, from green selection to extraction research.

The roastery launched in early 2016 and within the year was featured as a partner roaster by Kyoto-based specialty retailer Kurasu. Growth has been deliberate: Mel now operates at least three Osaka locations, including the original Shinmachi cafe, a second nearby spot under the MEL COFFEE name, and a newer outpost in the underground level of Grand Green Osaka — the mixed-use development adjacent to JR Osaka Station.

The roastery runs two vintage Probat machines — a 1968 L5 and a 1960 UG15, both refurbished and customized. The team's stated position is that roasting technique determines roughly 70 percent of what ends up in the cup, and roast profiles are adjusted continuously for seasonal shifts in temperature, humidity, and green bean moisture. Current lots lean toward high-end competition Geisha: recent offerings have included a Best of Panama #6 (Totumas Geisha Natural, pre-dry cold fermented) and a La Esmeralda Private Collection Geisha Natural from Panama. The lineup spans light to medium-dark and is designed to perform across pour-over, espresso, French press, and cold brew. Sensory training — daily cupping, attention to both orthonasal and retronasal aroma — is treated as the foundation on which roasting and extraction judgments are built.
