Sunergos Coffee has roasted in Louisville, Kentucky since 2003, opening first in the city's Highlands neighborhood. The Highlands origin matters: Louisville's most walkable, restaurant-dense district gave Sunergos an early foothold in a neighborhood primed for independent hospitality. A Tanzania Peaberry Lyamungo and a Colombia Decaf Natural EA both appear as best sellers. The EA decaf designation — ethyl acetate, a naturally derived solvent process — reflects a deliberate choice to preserve more cup character than older chemical or steam-stripped methods.
