Toby's Estate Coffee opened its Brooklyn roastery and cafe in 2012 as the North American outpost of the Australian specialty coffee brand. The New York operation grew to become, by its own account, the largest independently owned and operated cafe and roastery in the New York metropolitan area — a distinction noted by Food Curated. The brand has since rebranded as Partners Coffee, operating under that name at partnerscoffee.com, though the Brooklyn roots and roasting operation remain continuous.

The original Toby's Estate concept arrived from Sydney with a training-forward ethos common to the Australian third-wave wave of the 2000s. In New York, the roastery expanded beyond its single Brooklyn footprint, eventually adding a West Village cafe covered by Life and Thyme, establishing the brand across multiple Manhattan and Brooklyn neighborhoods. The sustainability angle was present early — Honest Cooking profiled the operation specifically on those grounds — and informed sourcing decisions that carried forward through the rebrand.

Under the Partners Coffee name, the roastery produces a lineup of NYC-neighborhood-named blends — Brooklyn, Manhattan, Flatiron, Jumpstart — alongside rotating single-origin offerings from Colombia, Ethiopia, Brazil, Burundi, Honduras, and Peru. The blend range skews accessible (medium roasts positioned as daily drivers) while the single-origin program covers both light and medium profiles. The operation sells direct-to-consumer via online subscription and wholesale, with cold brew and instant formats rounding out the product line.
