According to Coffee Insurrection, the roastery was among the first in Italy to work exclusively with specialty-grade coffee — a meaningful distinction in a country where the espresso mainstream long dominated trade roasting.
Scimone built HMC at a moment when Italian specialty coffee was still finding its footing. The 2013 founding placed him ahead of a wave of Italian micro-roasteries that followed in the late 2010s. Coffee Insurrection describes HMC as a pioneer in the domestic specialty scene, having held specialty-only sourcing as a core principle from day one rather than adding it later as a market signal.
The current lineup spans origins across Ethiopia (Chelbesa), Colombia (Tom Yum, The Trujillo's), Guatemala (Angelina Jolimex), Indonesia Sumatra (Pantano), Peru (San Francisco, Chiringuinos), and Uganda (Bulambuli).
