Paris now roasts much of its own specialty coffee. Long-running houses such as Verlet (1880) and the Caféothèque (2005) sit alongside roasters that started in the 2010s, like Coutume, Belleville Brûlerie, KB and Tanat. Each roaster below was checked against its own website and at least one independent source, such as a competition result or a named publication. A few roast just outside the city limits, in the Paris region, and the entries say so.
