Amsterdam's third-wave story runs through a tight cluster of independent roasters spread across the city's western and eastern neighborhoods. In Amsterdam West, Friedhats Coffee Roasters was founded in November 2016 by Lex Wenneker and Dylan Sedgwick after the pair worked together at an earlier roastery; Wenneker is a Dutch Barista Champion, and the micro-roastery built its reputation on transparent, lightly roasted single origins. A short distance away, White Label Coffee was started by Francesca Grassotti and Elmer Ommkens, who both previously worked at the Espressofabriek roastery before launching their own Scandinavian-styled space.
Lot Sixty One Coffee Roasters opened in Amsterdam in 2013, founded by Australian childhood friends Adam Craig and Paul Jenner, and its espresso went on to supply many of the city's Australian-inspired brunch cafés. The roasting energy is just as strong in Amsterdam Oost, where Stooker Roasting Company was founded in March 2015 by Florian Hessel and Onno van Zanten, and where Rum Baba Coffee Roasters, run by Jeroen Keizer and Lusan Drost, pairs its house roast with locally famous baked goods.
More recently, DAK Coffee Roasters was founded in 2019 by Louis-Philippe Boucher, building a strong online-first following for experimental, exotic lots. Together with longtime pioneer Bocca Coffee, these roasters give Amsterdam one of Europe's most respected specialty coffee communities, with sister scenes nearby such as Manhattan Coffee Roasters in Rotterdam.
