We spotlight London's Square Mile, founded in 2008 by Anette Moldvaer and James Hoffmann on transparency over theatrics, and pair it with a Wendelboe-style Yirgacheffe brewed on the V60. Square Mile was founded in London in 2008 by Anette Moldvaer and James Hoffmann — she a Q grader and green buyer, he the 2007 World Barista Champion and author of The World Atlas of Coffee. It was built on precision and transparency over brand theatrics: a lighter roast that foregrounds origin character, lot notes that name producer, cultivar, process, and elevation, and the long-running Red Brick blend as its espresso anchor.
